Ingredients

  • 250g MFM Cap Ros All-Purpose Flour
  • 125g Unsalted Butter, softened
  • 100g Icing Sugar
  • 1 Egg Yolk
  • 1 tsp Vanilla Extract
  • Pinch of Salt

Cooking Instructions

  1. Preparation: Ensure your butter is softened to room temperature (it should yield easily when pressed). Sift the MFM Cap Ros All-Purpose Flour and salt together in a separate bowl.
  2. Cream Butter and Sugar: Using a hand mixer or stand mixer fitted with the paddle attachment, beat the softened butter and icing sugar on medium-high speed for 3-4 minutes. Stop the mixer occasionally to scrape down the sides of the bowl. The mixture should become pale, light, and airy.
  3. Add Wet Ingredients: Beat in the egg yolk and vanilla extract until they are fully incorporated and the mixture is smooth.
  4. Add Dry Ingredients: Reduce the mixer speed to low. Gradually add the flour mixture (sifted MFM Cap Ros All-Purpose Flour) in two batches. Mix only until the dough just comes together. Stop immediately once all flour is incorporated to avoid developing tough gluten.
  5. Chill: Form the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes. This chilling step is crucial for preventing the cookies from spreading.
  6. Shape & Bake: Preheat your oven to 170°C (340°F). On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Cut into desired shapes using cookie cutters. Place on a parchment-lined baking sheet. Bake for 12-15 minutes, or until the edges are just barely turning golden.
  7. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
